So, I have never really been the girl to eat a salad every night. It really isn't my thing. I am sure some of you feel the same way... You want to be healthy, but you just can't do salads every meal. Ironically, I am going to tell you that when I make that one super scrumptious salad, I am completely in love. One of my favorite salad places called
Salata inspired me to spice up my ingredients in my at-home salads. So there I was last night crafting a salad, and let me tell you, it turned out delicious. I bet you are wondering what ingredients I used. Well, really I just threw a bunch of fruits and veggies in from around the kitchen and then topped it with some pieces of leftover salmon from the night before. What I think the trick is to making an amazing and also healthy salad is to combine beans, such as chickpeas or edamame, with a sweet fruit, like strawberries or nectarines. Make sure all the veggies and fruit are cold (at least I think it always tastes better cold)! Top with some protein, like chicken, shrimp, or salmon, that's slightly warmed. Finally, drizzle with a little balsamic vinegar! It ties everything together and is way healthier than thicker dressings. Bon appetit, you now can dive in to a killer salad! Check out the picture of mine from last night and the ingredients below:
Ingredients:
Nectarine slices
Raspberries
Edamame
Chickpeas
Carrots
Bit of Broccoli
Bit of Yellow Tomatoes
Salmon Slices
Bit of Balsamic Vinegar
Here is a picture of another one I made that I think had my dad drooling... didn't know something healthy could do that :)
