Veggie Recipes

Who said veggies do not taste delicious!? Not me! So let's agree to disagree with that statement and be open minded about our veggies. I made 3 absolutely, delectable veggie recipes this week that I wanted to share. Prepare to be amazed.


Can't Believe It's Celery Smoothie
#1 = Can't Believe It's Celery Smoothie

3 stalks celery
1 tsp wheatgrass powder
2 tbsp almond butter
1 banana
1-2 cups frozen berries (blackberry, blueberry, raspberry pack)
1 cup almond milk
1/2 cup pomegranate blueberry juice
 



#2 = Quinoa Veggie Stir Fry

Lightly sauté your preferred veggies in a skillet with olive oil and garlic
Meanwhile, cook the quinoa
Finally, mix together veggies and quinoa
Squeeze with lemon and sprinkle with favorite seasonings for added flavor

#3 = Sweet & Spicy Sweet Potato Cubes (my favorite!)

Preheat oven to 425 degrees Fahrenheit
Wash, peel, and cube your sweet potatoes
Shake in a gallon sized bag with olive oil, Tony Chachere's, and cinnamon
Pour out as a single layer on a pan and bake in oven for 15 minutes
Flip potatoes and bake for another 5-10 minutes until edges are golden brown
Dig in!

My family and friends love these Sweet & Spicy Sweet Potato Cubes. There are never any left over! We typically eat them as a side dish or on top of salads in place of croutons! They even taste better than chips, so instead of grabbing for that bag make these delicious and nutritious little guys!


Sweet & Spicy Sweet Potato Cubes

#4 = Rosemary, Garlic, & Olive Oil Potatoes

-Wash, peel, and slice potatoes into steak fry shapes (like the restaurants do!)
-Then, shake in a bag with olive oil (you can always add extra olive oil to the skillet if needed)
-Pour into a skillet at medium high heat and cook for about 15-20 minutes
-When almost done aka you should be able to almost completely stick a fork through
the now golden brown potatoes, add some chopped garlic and cook for 1-2 minutes
-Finally, sprinkle with fresh rosemary and cook for a few more seconds
-Remove from skillet and enjoy!
